and potatoes are an essential part of Álava's cuisine, as
well as the wide variety of vegetables it produces. Some of the
most regional dishes are la vitoriana vegetable stew, chorizo Spanish
sausage cured with paprika, Rioja-style cod, white beans with quail
and txarriboda which includes many different types of pork and used
to be the traditional main course at weddings.
We recommend you to try a dish of tender broad beans done in the local style, snails "a la alavesa", potatoes "a la riojana" or stuffed chard stems. For your second course try some good fish, roast suckling pig or game such as "stewed quail". For dessert the "Gasteiz tart", "goxuas" or "chocolate truffles" are all fabulous. Idiazabal is the local cheese which is excellent when accompanied with the world-famous wines of the Rioja Alavesa or Txakoli of Alava (a young white wine).

This is the finest and most interesting restaurant in Vitoria which
was built in the late 1400s as a tavern and post office. The restaurant
takes great pride in serving extremely fresh fish from the nearby
Gulf of Biscay. Menu items include a salad of endive with shellfish,
vegetarian crepes, a traditional hake dish called merluza koxkera,
ragout of fish and many preparations of monkfish, turbot, and eel.

Getting around in Vitoria
