When ordering traditional Canary food the first course normally comprises mixed vegetable stews and fish casseroles accompanied by the traditional toasted Canary bread el gofio.

The most popular local fish is "la vieja" which has fine white meat and pork is the meat to try with one of the most requested dished being pickled pork called "festival meat" and "conejo en salmorejo". The "papas arrugadas" with green or red garlic sauce are small and buttery potatoes that the island produces which an extraordinary flavour and provide an excellent starter or side dish.

The young wines of the north of the island of Tacoronte-Acentejo origin are an excellent accompaniment to Tenerife cuisine.
