La Palma Restaurants
Fish
is probably the most popular Canarian food. It is served fresh or
salted, and usually accompanied by one of a large selection of 'Mojo'
sauces which range in flavour and strength from the extremely hot
and spicy red to medium or very mild.
Sancocho is one of the traditional fish stews made from salted sea bream, stone bass or wreckfish which should be tried. As far as meat is concerned you should try the specially prepared roast leg of pork.
Potatoes are another common ingredient on La Palma and are served in a variety of ways, with stews or papas arrugadas (wrinkled potatoes), which are boiled in extremely salty water and eaten with hot 'Mojo' sauce.
Gofio is another traditional staple, made from ground and toasted maize or wheat, it is highly nutritious and can be eaten as a dough mix with savoury foods such as fish, or as a drink in milk.
The culinary strong point can be found in the desserts, 'marquesotes', almond cakes, 'bienmesabe', Principe Alberto, almond cheese and 'rapaduras' which all put a fine finishing touch to your meal. There are also a number of excellent cheeses made on the Island.
